Here is the absolutely stunning 2023 ‘Tenuta Bianca’ by Cimento.

Today we share the truly unique wines of Cimento. A Latin word with a historical meaning, Cimento refers to a mixture used by goldsmiths to purify precious metals, usually by fire. In the seventeenth century, the term gained broader meaning and referred to testing or experimenting: ‘to try’ or ‘to experiment.’ The name is meant to lend itself to a philosophy of experimentation.

I was so impressed with the last set of releases which are entirely sourced from their land holdings in the Walla Walla Rocks District. Cimento is owned by the Walla Walla Land Company — the largest land holders in the Rocks District. Their new white wine was made by Todd Alexander and it is a beyond captivating Rhone-inspired blend.

2023 Cimento ‘Tenuta Bianca’ White Wine- The 2023 ‘Tenuta Bianca’ is quite simply unlike anything that you will taste in the Pacific Northwest. Sourced from sites in The Rocks District (55% Orselli, 45% San Tomasso) the wine was stored in all neural French oak barks for 16 months before bottling. It is composed of mainly Piquepoul and Clairette Blanche with 16% Rousssanne, 5% Viognier and 3% Bourbelenc. It is intense and golden in the glass, offering honeysuckle water, and mango notes alongside wet stone, cantaloupe and suggestions of salted cashew nut on the palate. Rich and unctuous, with serious verve and texture, this is absolutely amongst the greats that you will taste on the west coast. Drink 2025-2035- 97
