When I was in Paso Robles I had the chance to visit one of my favorite restaurants in California, Les Petites Canailles which exemplifies top class French food. On their wine list I ordered a gorgeous wine by Bollinger, featuring the warm 2018 vintage, Bollinger ‘PN AYC18’ Champagne. I was really looking for a big and bold champagne and this did the trick — particularly pairing beautifully with a fresh oyster appetizer.
The ‘PN AyC18’ is a 100% Pinot Noir wine, predominantly from the Aÿ cru. It is blended with other villages on the Montage de Reims, such as Tauxières and Verzenay. I love great Pinot Noir champagnes and this is absolutely one of them. For those who enjoy a bigger style of champagne, I suggest you try this bottling.
